Moist Vegan Chocolate Chip Cookies
Ingredients:
1 ½ cups sugar
1 cup vegan buttery spread (earth balance or bestlife)
1/3 cup soy or other milk alternative
2 teaspoons vanilla
2 tablespoons molasses
3 cups all purpose organic flour
½ cup cocoa powder
1 ½ tsp baking powder
1 ½ tsp baking soda
½ tsp salt
1 ½ cups vegan chocolate chips
Preheat oven to 350 degrees
With a mixer beat the sugar and buttery spread until it is light and fluffy, add the rest of the wet ingredients and mix: milk alternative, vanilla and molasses. In a separate bowl stir together the dry ingredients: flour, cocoa powder, baking powder, baking soda and salt. On a low speed slowly add the dry ingredients until it is thoroughly mixed. Remove from the mixer and stir in the chocolate chips. Place heaping spoonfuls of the batter onto an ungreased cookie sheet. Cook them one cookie sheet at a time, should be 4 cookie sheets full with 13 cookies on each, 52 cookies altogether. Cook 10 minutes, after you take them out let them sit for at least 2 minutes before removing from the pan to cool completely. Enjoy!
